Jeff, the sky's the limit with Italian on a smoker depending on how fancy or how many you are serving....just a few suggestions....Eggplant Parm, Spinach & Cheese Frittata (or any other frittata to your liking), chicken or veal roulades or cutlets, meatballs, pork loin stuffed and rolled (then sliced for individuals), personal or large pizzas, marinated chops (pork or veal), various seafood or fish (grilled octopus if your daring) or scallops (bacon wrapped and smoked), clams, mussels, etc. Now I'm Hungry..LOL
