italian food on the smoker?

My wife has chosen an italian food theme for our holiday xmas party. I can smoke sausages but wpndering if anyone have any other suggestions?
 
Jeff, the sky's the limit with Italian on a smoker depending on how fancy or how many you are serving....just a few suggestions....Eggplant Parm, Spinach & Cheese Frittata (or any other frittata to your liking), chicken or veal roulades or cutlets, meatballs, pork loin stuffed and rolled (then sliced for individuals), personal or large pizzas, marinated chops (pork or veal), various seafood or fish (grilled octopus if your daring) or scallops (bacon wrapped and smoked), clams, mussels, etc. Now I'm Hungry..LOL
 
We always do a Lasagna on Christmas with a tray of sausage and peppers and Chicago style beef sammys.
Fried shrimp and crab stuffed mushrooms are a good app.

Prosciutto wrapped mushroom caps stuffed with a cube of Gorgonzola and a walnut half or a couple of almonds, great appetizer! Dang it, I just had lunch and I'm hungry again!!!
 
My first choise would be pizza.
But I could imagine you need some meat !
So only for this reason my new first choise is PORCHETTA.
