My wife's sisters family came in from the Tampa area to visit, but to also escape the hurricane. I decided to show them some Texas Hospitality.

It was short notice so I had to forgo my usual prime brisket and cook a choice. I cooked this one around 260 to 275. Wrapped it in butcher paper once the bark set.

I served it with some of my homeade Texas sausage which everyone loved. I learned that I have to treat a choice brisket a little differently.
I don't know that it stands up to 275 cooking temp because my fat had rendered in the point almost completely and I prefer some there, but
It was delicious. I know why I prefer the prime though. We served it with my wife's German potato salad. Sorry for the out of focus pics. I had
some impatient hungry guests.

My Aggies managed to barely hold their own against an FCS team. Hopefully the Cowboys win tonight.

The winds are supposed to reach 40 to 50 MPH here, and at least two inches of rain will fall. That should be enough for refugee status.

Seriously, the 'cane is moving westward, but there is a strong high pressure to the north of here that is compounding the wind issue. We're in a vortex of sorts between the 'cane and the high pressure.
