Went and picked up what I didn’t have including fresh made today bread.
Smallish sized lean pork roast is thawing.
Hopefully I remember pics later, it’s going to get good!
I was out of sliced dills and so were they, these dills sliced the opposite way should still do the trick.
The anticipation gets to the MRS a great deal with these, it is her favourite sandwich....funny thing is she not started liking dill pickles about a years ago.........
It’s possibly a great thing she met me, she didn’t eat a lot of good stuff before......
Hot sauce, horseradish, pickles, seafood, smoked food, barely any bbq food....:unsure:..I’m sure there is more too

My wife was born & raised in Ireland so used to eating mostly bland food. First time I made tostadas she about fainted from the heat. (I load them up with Jalapeños.) Now her tolerance for hot food is better than mine. Both daughters are the same, so I feel like a wuss when we have hot food :)
 
I have a few pics of the final results, these were better than the ones I made about a month back.
I did a citrus type marinade for exactly 2 hours.
Orange juice, lime juice, olive oil, oregano, salt, pepper, cumin and garlic.
I let it drip off and then I heavily covered it in Oakridge competition.
JD lump, 1 piece of apple wood.
Made a really hot small fire and poured it beside raw lump and the apple hunk.
I cooked on the 22 performer in the big basket.
It cooked longer than usual, it was chilly out and I was able to hold a nice low 235 to 245 for the cook.
Pulled at 138 and let it rest, it had great moisture in it and just off pink.
Good Swiss, honey ham and sliced dills.

Still trying to get through the rest of that roast.....
Thin sliced high heat toasted with process cheese.
I know there is bettter cheese out there.....I have lots in my drawer but sometime the process cheese is required.

Currently whipping together a nice 4 cheese Mac n cheese.
To go with some great all beef hot dogs.
I know it doesn’t sound like much for dinner but if you haven’t had homemade Mac cheese and bbq hot dogs with fried onions in a while, you may forget how good it is.

If anyone has the older version of "Weber's Real Grilling" 2005- on page 156, there is a Miami version of the sandwich. Looks good!!!!
