These were stubborn, Tony, and just didn't want to give it up! I was cooking pretty low at 230F for most of it, though, and it was a 10 lb slab of meat......I really thought they would finish a couple of hours earlier than they did, but stalled quite a bit more than I expected. They were worth the wait, even if that meant a REALLY rich dinner at 9pm (I'm still a little full....)10 hours. Wow. They do look great.
My daughter said I have learn to make bread like that. That loaf looks equally as impressive as those beef ribs!
