Iberico Chops

I am questioning the authenticity of them being labelled as Iberico, due to the mild ish flavour but the fat content was outrageous.
Th butcher also claimed to get them on command, not sure how fast but a phone call some time ahead he said if I needed them.
I paid the price for them however.
Over cooked maybe by about 5 degrees, very juicy, rich, and very delicious.
Red pork and the MRS is a tough one to overcome.
Made with canned…..beans and some mashed.
Not too much work but good enough for a mid week meal.
Also got a new RF toy in the mail as well….4 channel with one dedicated to a grate level heat probe.
