Picked up a couple of baby backs on a great sale!
Rubbed them up with a yellow mustard binder. Did a base of my Santa Maria rub then added a variety on tops
Setup the 18 WSM which I hadn’t used for awhile…
Used a combo of hickory and peach
and found a jumping spider under the door handle!
Was a little worried about chow time as they didn’t go on until 4pm
Two hours in
My friend came over with some lamb for an appetizer! Added that and then seared on the Gold B!
Pulled after 3.5 hours and let rest
Dry, no spritz or wrap. They cut nicely
