I didn't want to stress over a cook so I thought I'd try country style ribs and if they didn't come out then I was going to write it as a loss. I haven't used my 22" wsm in a long time so i thought this would be a good cook to try on it. It also didn't take a long time to do. They came out awesome! I did not use the probe thermometer I just used the temp gauge on the cooker (I know I know)
This recipe comes from Malcolm Reed and its on you tube. If you search his country style ribs he gives step by step instructions.
The ribs were seasoned with an all purpose BBQ rub that I use from amazing ribs
No water in the pan
Smoked for an hour and 15 minutes with apple wood chunks at a higher heat of 275
Then placed into a pan that had 1/2 cup pine apple juice and a half of a bottle of open pit BBQ sauce. Covered in aluminum foil and place back in the smoker for another hour and a half.
Then the ribs were placed back on the racks for another 15 minutes with some of the sauce brushed on. They were very tender.
