We ate at Famous Dave's in Germantown last weekend for lunch and DAMN it was good!! Wow! I thought MY ribs were good. His blew me away....I am so humbled. :D

He may be a bit of a dork but he knows what he's doing around BBQ. :wsm:
 
Before I did my own bbq that's the spot I would go to all the time....I like all their food.

Even before I knew what a bark was the manager explained to me the process..

He saw my sandwich and told me hey you got a great sandwich with lots of bark on the meat.
 
I went to the KCBS CBJ class at the Jack and Dave was in the class. He is a great guy that started with a cooker he made from a trash can. When I go to DC I stop by the local Famous Dave's. I've never been disappointed.
 
I'll give the man credit, he knows how to make BBQ for the masses, not easily done in today's economy.
I've sampled his food twice, the mac&cheese I really liked, ribs & chicken where also very good!

Wow. There must be a lot of variation in the food at different Famous Dave's. The food here in the Detroit land Famous Dave's is fair at best. It is generally too salty, the chicken is always too dry, you can tell the pork is way over done (likely from being cooked and then re-heated) and the brisket is like roast beef. Trust me, I'm no food snob and I'm not saying my food is great, but I can easily put better BBQ out than FD. There are a couple places around here that are good (like Slow's), but FD isn't one of them. Having said that, i have ate there and would again, but it's more of a place I tolerate in a pinch. As was said, it's a chain and I understand that they have to work under that reality, but I'm surprised to have people on this board say it was good food, let alone that it was better than home made. Maybe in Germantown they got the pit master from the Commissary and are working some magic but that doesn't appear to be the case in Southeast Michigan.

I have eaten there a few times and it isn't bad at all. I also like their rib rub when i am to lazy to make my own :)

The burger is really, really good. It's real bbq for the masses. Great guy.
 
I like their food. The only thing I don't like is that they don't cook it on site. I worked with a guy who was a cook there and he said most of their stuff comes in pre-smoked. Which tastes good but I like local joints who do it all out back.
 
I've eaten at FDs in two different states, and there was no comparison between the two. One was pretty bad, and they even cut the brisket slices with the grain. The other one was very good with a great smoke ring on the brisket and nicely cooked ribs.
As with any chain restaurant, you take your chances with each restautant.
 
Dave is a nice guy. Hey he was good enough to answer questions here on TVWBB last year.
He is the real deal, one of the good guys.
 
I've eaten at the FD's here in Auburn Hills, MI several times and to be honest, I've never had a bad meal from there. Is it the best BBQ? Is it better than probably anyone here can do in their backyard? probably not, but for a chain, it's not bad. I had the privilege of meeting Dave down at "The Jack" two years ago and he is a great guy and will talk BBQ with you as long as you want.
 
Cooking for thousands a day in all those restaurants is incredible, there is a big difference in which location you go. As always it comes down to a manager who cares. When you find one that does it is very good.
