Huevos Rancheros

I made some Chili Verde a while ago (https://tvwbb.com/showthread.php?71634-Hatch-natch-Chile-Verde-Burrito&highlight=hatch+-+natch) & it was too spicy for my wife, so I had it all to myself. Used Hatch Hot for that cook. Feeling remorseful because a Chili Verde Burrito is one of my wife's favorite things, I cooked another batch a few days ago using half Hatch Hot & half Hatch Mild - roughly 3 lbs of chilis & 3 lbs of pork butt. The stuff is beyond nuclear, I'm questioning who labels the bins of chilis at Sprouts, & of course... it's all mine.

So when life gives us lemons, I suggest Huevos Rancheros for breakfast.

Looks great Robert my kind of breakfast. I'm wondering about Sprouts to, got some mild hatches and blanched them then into the food saver and freezer for some future use. They had the extra hot next to the hot which was next to the mild. No way by looking could you tell any difference, guess I'll find out when I use them.
