Hubert Keller's rotisserie chicken and Tony's refried beans

Haven't made rotisserie chicken in some time, so I went back to it last night. The chicken is from Costco and I like these for their meatiness and reduced fat. Hubert Keller had a simple recipe - rub the chicken with fresh squeezed lemons then truss, put the used lemon wedges in the chicken's cavity and then liberally season with kosher salt, black pepper, paprika, dried rosemary, thyme and basil. I also put a light coat of canola oil on the bird before seasoning.

Tony's beans are fantastic! Sauteed onion and added some dried chiles before putting the beans on to simmer then smash.

Man that is one fine looking chicken dinner!!! Will have to look for one of those chickens next time I'm at Costco.
 
WOW with that roti chicken you hit that puppy out of the park! So many people love Tony's beans me included he needs to get a patent on that recipe.
