Haven't made rotisserie chicken in some time, so I went back to it last night. The chicken is from Costco and I like these for their meatiness and reduced fat. Hubert Keller had a simple recipe - rub the chicken with fresh squeezed lemons then truss, put the used lemon wedges in the chicken's cavity and then liberally season with kosher salt, black pepper, paprika, dried rosemary, thyme and basil. I also put a light coat of canola oil on the bird before seasoning.
Tony's beans are fantastic! Sauteed onion and added some dried chiles before putting the beans on to simmer then smash.
Perfomer getting ready....
Obligatory early action shot
Big can of pinto beans. This can was $1.64; good value.
Beans are ready! I did them in 7 qt large dutch oven
Late action shot in the dark.
The bird at rest
Your plate!! I added some roasted russets, leeks and carrots.
Thanks for looking!
