Howdy folks…I hope everyone is getting ready for some R&R with family and friends as we head into the holidays. Certainly one of my favourite times of the year. I’m a real slacker with pictures and posting lately. Still cooking and of course, still checking the forum a few times a day. This place continues to be an inspiration in many ways. Anyway – a hodgepodge of photos and cooks incoming!
Some thick cut pork chops getting their sear on after coming up to temp indirect. This is definitely a favourite meal of mine. I season mine with Tony’s C’s and the Mrs. has KS, P, Cumin and Adobo. We do these pretty frequently.

Here is a Rib Eye I did a week or two ago. I cooked this under a large weber chimney. I used Royal Oak All Natural Briqs instead of lump. Love this – but definitely needs to be all natural lump going forward. A little gritty…nothing I wasn’t used to, having grown up eating sandy sandwiches on the beach in NJ. LOL

Simple one here – Cast Iron cornbread. Was amazed at how easy it was to get this right on the kettle. Piece of cake – er – corn bread.

Love this pic of StL ribs. Unfortunately these were way too salty. I used Costco’s house rub. It’s good – but high in salt in my opinion. Would cut in half – at least. It’s too bad – these were cooked nicely.

My first batch of homemade bacon. YUM. Thanks to Bob Correll and all who contributed to this Thread Bacon made easy – it’s no joke! Super easy and super delicious!

A pizza pie – love making them on the kettle. I’m usually cooking these for 5-6 minutes. Nice char on bottom and cooked on top. I love the different pizza cooking variations that everyone is trying. Great ideas and great results!!

A popper. I just like this picture. A family friend insists we have these every time he is over the house. I’m happy to oblige.

Plain store bought bacon on the grill. Love cooking bacon in the grill. A slightly different flavour than in cast iron or – gasp – the microwave. Truth be told – I like all three ways, it is bacon after all. But I love it on the grill like this. Perfect for topping off the burger!

Our Christmas cactus bloomed early… by like 6 or 8 weeks. Just a huge, beautiful plant.
