Hi-heat legs n thighs

I was going to cook some chicken thighs and legs on Sunday but our plans changed. I had put them in bag and poured Stubbs citrus & onion Chicken Marinade over them. So got about a 48 hr. soak. Removed the water bowl out of the 22 wsm and fired it up and let it get good n hot (350+). Added 3 small/medium chunks of Apple when I put em on.




While they were cooking I simmered the remaining marinade down, and combined the last of some Stubbs original and SBR Hawaiian together, then added that to the pan. At about 50 mins. sauced them and threw on some Asparagus while they finished.



Pulled at 165* and rested while the Asparagus finished



Then plated with some long grain & wild rice also

This has now become my favorite way to do chicken (Hot and Fast). It is so effective and, not to mention, EASY, with the best results I have seen. In fact, if it ever stops raining this week, I just might do some chicken parts myself (sooner rather than later).

Looks great Doug, did my first high heat chicken on the WSM a couple of days ago and it will be my go to way of grilling chicken from now on, really good stuff!
