Happy Thanksgiving from Alaska!

Happy turkey day folks...busy day but it worked itself out...did 2 12 lb birds in the WSM and another in the oven...one of the smoked birds was for some close friends from "Wisconsin" of al places...my buddy's father in law said it was 10 when they left the Packer state on Wednesday...today in Alaska...40 and rain...perfect smoking weather!!

Brined the two birds in the apple brine for 24 and air dryed for 12...I staggered these 2 birds cause my buddy's fam was eating much earlier than we did!!
Both birds on...mine is underneath!! Top had been on for an hour under apple smoke...WSM ran about 300 to 325 ...no water in the pan..temps dipped a bit when I added the birds but recovered quickly!

Bout 2 hours on the top bird!
Top bird hit 160 right at three hours like clockwork...buddy, father in law and myself finished off a brewsky and loaded her up in a warm cooler!!

Bottom bird moved up and went for about another hour!

Meanwhile my three favorite girls having fun finishing up sides and wine!!

All plated with stuffing, yams,
Mashed taters, salad...2 types of turkey and nice rich gravy!!

My boy takes after his father...wings are his fav....he pretty much just ate turkey!!

All in all great stuff...I didn't mention much about the oven bird..I didn't brine it...injected with butter, broth and white wine...stuffed with onion and celery...weber garlic and butter on top!

Hope all your webers cooked true and your birds came out tasty...more important...hope you spent quality time with your family and friends..you only go around once..enjoy..
