Hanging Ribs

Seasoned up a rack of baby backs with Penzey's BBQ3000, Galena Street and Pig Salt's SW BBQ Rub

fired up a 22"OTG with Kingsford and apple wood for smoke...
brought out the Gary's Smoke Rack Hanging System, cut the rack in half, hooked'em an' hung'em.

using this on a kettle, you need to employ the lid from a 22" WSM , so I did.

saw some guy selling a piece of wood with an eyehook on it for 8 bucks...
you use this device to remove your hooked food from the hanging system.
So, I made my own.

works great. Anyway, back to the ribs...

added a few fingerling taters and George's favourite veggies to the dinner plate...

...and a pool of sauce for whatever.

Jim do you notice any difference in times, temps, or moisture by hanging the ribs? Any differences at all?

Nice cooking Jim...very cutting edge!! Love it...those ribs look perfect..I was going to pass on the hanging rig but I may reconsider now!!
