Haven’t been grilling much this week because of surgery on my leg (One down one to go).
Every Halloween I make my “Spooky Chili” which is one of the chili recipes I do. It takes about four hours to make so I did it on the gasser so I wouldn’t have to mess with charcoal and it was also a little easier to maintain the right temperature. Less up & down for me.
I didn’t take any action pictures just wasn’t up to it. No plated picture because we just put it in a cup and eat it between handing out candy to the young ones.
So why am I posting this, Barb and I love to have corn bread with our chili and Barb took that on. She found a recipe in Weber’s Real Grilling Page 279 called Skillet Cornbread with bacon and chives the only thing Barb changed is she used green onions instead of chives, which we didn’t have.
We’ve tried a gazillion corn bread recipes over the years but this one was spot on for eating with a bowl of red.
Really good, just the right amount of heat. So if you like corn bread give this one a try.
Have a great week
