Halibut on the gasser

My neighbor brought home a freezer full of halibut from a fishing trip they took on 7/4. He gave me a ~1# vac sealed portion & asked for a small sample of how I cooked it.

I wanted to keep it simple since it's a rarity for me.....but now I'll be looking for my own supply.

One was seasoned with sea salt & 16-mesh black pepper, & the other was rubbed with jerk paste & EVOO, both sat out for ~45 minutes while I did other stuff & my jerk rice cooked.

The lemon didn't get used, I thought I would but didn't.

I preheated on high but turned all 3 to medium (no smoke wood) & it stayed just above 400F the entire time

The jerk filet flaked at about the 9 min mark (had a repeating timer @ 3 min intervals)

Saved a small portion for the fisherman, I took over a couple filets of yellowfin tuna so they could compare. His wife said she was "all fished out", he doesn't like hot, & she's not a big fan of hot/spicy either, but he had her taste the jerk portion :)

I really liked the halibut, it's been a while since I had it last. Some bites reminded me of scallops, it was very meaty & tender, I enjoyed it.
 
Looks good! I'd take either one, though I'd probably prefer a lighter version of the jerk marinated one.

I'd also take either one. looks delicious, bet it was good.

Here is another option EVOO, Kosher salt, black pepper and then make a Mango salsa to top the halibut off with when done. They really go great together.
Some people use real Mangos, but i prefer the refrigerated Mangos in a jar in the produce section at most markets.......lots of sugar though, but thats what gives the salsa the flavor.

Delish! If you have never tried Paul Prudhomme's Blackened Redfish Magic on fish cooked just with a little butter in a HOT cast iron pan, you should!
 
You are sooo lucky to get some Halibut, it's one of my favorite fish! Yours looks perfectly grilled! Nice job!
 
Clint, that Halibut looks fantastic. I love Halibut but never have cooked it. May have to give it a try, we do have a few CIS we can use. Thanks for sharing the recipe with us.
 
The only thing better than grilled halibut, is having a neighbor who comes home with a freezer full of it and gives you a pound! Looks great Clint.

Reminds me of our trip to Alaska. Did a day fishing for Halibut with the wife. Highly recommend everyone to do a trip to Alaska at least once in their lifetime.
 
Looks great! Grilled Halibut is my favorite fish besides tuna. Leftovers make great sandwiches too.

Now I want fish. Don't know why I don't do fish more often.
Did I mention that now I want fish. LOL.
