That's beautiful!! Mahi is one of about 3 types of fish that I'll eat. I love to put some Old Bay Blackened Seasoning on mine and grill it over lump. Yum.

Yum!!! Anything special to season/marinade the fish or just 'naked'?

I actually made this a while ago, but I think it was just coated with a little olive oil, salt, and pepper. I'm making it tonight so I may try a cajun seasoning for a little more kick. I think it'll go with the sweetness of the salsa real well.

I think I'm going to try a cajun seasoning next...It should go well with the sweetness of the mango.

That looks so good Mike, Mahi is one of my favorites. Never cooked it my self but may have to give it a try.

I love BBQ mahi mahi, yours looks great. The only thing I like better is catching mahi mahi (in Mexico where I mostly fish, we call them Dorados)

That sounds awesome! I'm going to VA beach later in the year and I saw they have a fishing charter for mahi mahi. Only thing is you have to go about 75 miles off the coast and it's a 12 hour charter! Hopefully I can just buy some fresh from a market nearby.
