I wonder if his granite could be used to replace a pizza stone? Interesting article Jim.
 
I wouldn't Bob. Pizza stone is meant to be used in a super hot oven (tempered). Because granite is not, any mini-flaws will be accentuated in the high heat you're looking for. If it's going to crack, it'll do so on the first "heat". You can try it once (and maybe more than once). Certainly won't hurt. At worst, you'll have two or more pieces and at best, it works!

It will be a lot heavier though than the normal pizza stone so take that into account. A square foot of 3/4" granite weighs about 13 lb. and density does vary.

If you have an 3/4" thick and 18" round piece of granite (but would probably be square), that would weigh about 26 pounds. Not too practical.

Consider how long it would take to gradually heat up and even longer to cool down. Stick with a regular pizza stone. IMO.
 
Yeah, I love having a bunch of people over and cooking for them. Makes those long hard work weeks seem worth it somehow.
 
So Joe drinks Schlitz and has a Potosi t-shirt. I'll bet he likes cheese, too.;)

And I really like this comment: "But (for example), if we're making a steak, we don't know how to prepare it other than on the grill."

I would love to do that except with 9 grills and smokers (Yes 9 now I adopted a nice for free Ducane yesterday) in my small backyard I don't have room for people:rolleyes:
