Good Ribs - Bad Ribs


 
two fantastic cooks Jim, really like the bacon/onion or onion /bacon, nice smoke ring on both, and they both look like winners, I personally like beef better
 
Super tasty Jim! Never had beef ribs..and frankly those looks fantastic. But i would go with the spares. Not like i would turn down anything you serve :wsm:
 
Jim if one of those racks were the "bad" ones and you didn't like 'em, send them to me!! I'll eat them!! Fun cook and great job!
 
The suspense is mounting!
I'd say that the bad ribs were the pork ribs, which you cooked earlier and were all gone. That's bad because they were good.
The good ribs were the beef ribs, which you just cooked at posting time and still had yet to eat, and they're good.
But then, I do like the George Guitar Thorogood bad-to-the-bone theory.

The bad ribs (i thought, tho' liz said they were good) were the pork ribs...
Not sure what happened: Cooked with apple wood at 250 to 275ºF for 3 hours then wrapped in foil with juice and rhum for two hours... took them out of the foil and back on the grill with sauce for 45 more minutes... They just were not tender...

Quite boring actually... they could have stayed in the foil another hour i'll bet.

The beef ribs, on the other hand were moist, tender, full of flavour and only used salt & pepper (with a little cayenne). Very Tasty indeed!

yeah, those pork ribs looked sooo good and meaty going on the grill/smoker at the start... and soo disappointed with the outcome.

Tough decision here having to choose between two excellent looking racks of ribs, like splitting hairs. I think I need more data, Jim --- so I guess you'll just have to send me one rack of each. :D
 
Both look incredible to me. Not a huge fan of beef ribs, but if you cooked I'm, I'd sure eat em. Thanks Jim
 
While the pork ribs looked terrific, the beefun's looked like I want to/need to/should be there!

Me being very partial to beef ribs , I would have picked those as the good rack. You're an honest guy , jim. If you hadn't said the pork ribs were sub par , we would never have guessed. They LOOKED amazing !
the sides also looked really nice. Good cookin.

I should have left the porkies on longer.... I KNEW (in my mind) they weren't done when I took them off... my only and ONLY reason for doing so, it was 730pm going on 9pm very fast and I WAS HUNGRY!!!

Well Jim I don't see any "bad" ribs anywhere in this post!! Both look amazing too me!! Got me craving some ribs!!
 
Those racks both look amazing. I think the bark on the beef ribs looks amazing. Like the sea salt, pepper, cayenne rub. Thanks for sharing both of them.
