The bad ribs (i thought, tho' liz said they were good) were the pork ribs...
Not sure what happened: Cooked with apple wood at 250 to 275ºF for 3 hours then wrapped in foil with juice and rhum for two hours... took them out of the foil and back on the grill with sauce for 45 more minutes... They just were not tender...
Quite boring actually... they could have stayed in the foil another hour i'll bet.
The beef ribs, on the other hand were moist, tender, full of flavour and only used salt & pepper (with a little cayenne). Very Tasty indeed!
yeah, those pork ribs looked sooo good and meaty going on the grill/smoker at the start... and soo disappointed with the outcome.
