Heading home today. Leaving the 60 degree stuff and heading back to the heat and possibly thunder storms today. For my last dinner for this trip I decided to do some chicken. Went to the butcher shop and they had nice, small free range chickens on sale. I spotted a little 3 1/2 pounder and had him cut it in half. Cooked that up with some potato slices with the lemon aioli sauce I like and some grilled yellow squash and zucchini. Here we go.

Got the chicken marinating in some oil, ac vinegar and some poultry seasoning. Let it marinate for about 3 hours, flipping a few times.



Scrubbed a nice russet and made the lemon aioli. 1/2 cup mayo, tbsp. fresh squeezed lemon juice, and lots of chopped garlic.



Just a small zucchini and yellow squash today. A little oil and some Mrs. Dash (Garlic & Herb) just before grilling.



Got the chicken on the grill. I cook chicken many different ways but this is my favorite method. Over direct heat, turning several times during cook. That's how I'd cook it if I had one of those Santa Maria Grills like Jim's.

Great cook to end the trip! Never done chicken direct like that, but it looks crispy outside and moist inside.

Just pulled fresh squash from the garden....and now I know how I'm gonna eat 'em! thanks.
