Genesis 1000 project


 
Down here doing a brisket on gas is criminal. Ill save the Weber for the Salmon and burgers. I did this one with Mesquite. I hope to have my 1000 online this week.

Yah, up here, we are only picky about our cheese. But, here is a brisket on my Genesis:

Tough to get a smoke ring with a propane grill I am guessing. I did see the WEBER smoke chip boxes though. I hope to have our first meal tomorrow or Friday on our 1000
 
Well, it tasted really good. I have to do another one soon. However, I seem to remember, not all that long ago, a good Sirloin costing less than what they want for Brisket now a days.
 
I have tried a whole sirloin roast. Not good. However a nice prime top sirloin tip roast is wonderful
 
Yah, Sirloin is just good plain Beef. Not tender and juicy, but I like the flavor and it is much less expensive than most other cuts.
 
That butcher shop I go to near my dad's sells a wonderful Prime Top Sirloin Tip Roast that is to "die for". I also enjoy a bottom round roast but you gotta be REAL careful cooking them. 5 minutes too long and they're toast
 
Costco was out of tri tip. All my local butcher had left was this.

The Weber got hot quick and I seared them. I had never seen a tri tip this small so it didn’t take long to cook

Akaushi beef tri tip. It was all they had. It weighed 3# and was frozen. That is normally what the ones I cook weigh. When I thawed it there were 2 in there. I have never seen one this small or like this either. I chalked it up to being the akaushi beef. None the less I cooked it up and it turned out great.
 
What the heck is Akaushi beef? Is that a cow breed or one of these new fangled "near" meat things? The goofy oriental sounding name makes me take a pause.
 
Some specialty beef like Wagyu. I think they walk the cows daily and massage them up until they slaughter them, not sure. It was all they had, I usually get the USDA Choice tritip. This was a specialty butcher shop I went to and they had all sorts of exotic meat.
