Gameday Brisket

Got a 12 lb choice packer and cooked it for the Dallas Cowboys game today.


This brisket had a ton of fat on it. I need to start saving that for sausages or something


Brisket trimmed and seasoned with salt and pepper


After 16 hours on the smoker at 225 to 250. I didn't wrap this time. I'm wrapping in foil here to rest it.

Picture of some sliced point. I didn't get the fat that well rendered but it tasted amazing.

Next time I'm going to bite the bullet and try the butcher paper thing.



 
Your Brisket looks really good!!! Hope you were able to enjoy it since your Boys probably left a sour taste in your mouth!
