Gambel Oak Ribs

As promised I was going to do a Gambel Oak or oak brush review. A couple of people were interested how it would work.
Here is a nice big piece that's about 50-50 dry.

Here is the oak in bed with some sugar maple lump.

5.5 hours later and very little oak left. Had light blue smoke the entire cook. As a off set should do.
Lite neutral aroma.
Baby backs are on and one buffalo dog. Ribs were seasoned with salt & pepper only.
Remember, this is a wood smoke test.


Here they are done, little blurry but beautiful smoke color.

Look at that beautiful, rib in hand. Beautiful pink color all the way through.

I was very impressed with my oak wood as a smoking wood. I will be using oak more often.
The war dept. loved it, wants ribs that way every time. She gets what she wants.
And the buffalo dog the 4 of us sampled that a hour into the cook. Blue & Myles said it was the best.
All in all great food. Keep grilling & chilling.

Russ thanks for doing that test, those BBs look great and a buffalo dog, well if it's puppy approved it's got to be good. Seeing this area is full of Gambel Oak I'm going to try some also.
 
Russ, that looks delicious and like Rich said if the puppy's approve it's a go for sure. We'll be trying that real soon.
 
Great looking test run Russ. Looks like you're enjoying that offset. The only time I've used oak is when I cook pizza. I have a bag and will give it a try.
 
Thanks for the review Russ. The ribs look tasty. I am going to have to give the old "scrub" oak a try. It grows all over the foothills here.
 
That's some excellent looking Ribs Russ. I'm not seeing any snow in the background there, you gotta be happy about that
