digging through my freezer yesterday I found all kinds of good things that've been buried for months.....wings, deli pastrami (1# chunks I didn't run through the slicer before freezing), a couple other interesting finds, and of course, this tri-tip from 11/2016. I put it in the meat drawer yesterday and it was still frozen this morning so I put it on a wire rack on the counter today & let it defrost. After it'd thawed I hit both sides with SPOG, then back into the fridge.
I went for a bit of a hike, made it 3/4 of the way there & said F it (lifting cost me endurance), headed home (left the ignition on my bike on for >2 hours while I was gone, had to bump start it when I left)
The Sundial is visible just to the right of the left-most knob
heading back
looks warmed up enough for me:
gratuitous foot shot (calf was kissed by a hot pipe today - my old callous must've worn off)
I forgot about the reverse sear. I seared 3 minutes per side to start, then 10 minutes indirect, flipped, 5 minutes indirect, then direct 5 minutes on one side & this is what it said so I brought it in:
a little overdone but damn good, if I do say so myself. I wouldn't complain if I didn't check it with a thermometer after the tented rest (141F)
Not my favorite brew, and definitely not a good idea to drink a multi-vitamin with it (yesterday - yuck). Good dinner though - good french bread too.
