Flat Iron Steak with Anchovy Salsa Verde

Beautiful day yesterday here in SE Mi. The little lady and I decided on Flat Iron steak w/ ASV.

We used Detroit Steak Spice. Plastic wrapped, weighted with another cutting board on top and
a 3lb dumbell to press the spice into the steak. 2 hrs later and ready for the grill.

Pulled this out the the cellar while we were waiting on the steak, and making the sides and verde.
05 Langmeil Hangin' Snakes. Just starting to reach it's potential.

In direct till IT hit 110, then a quick sear to add color.

Off to the side for a few minutes, while Elizabeth tossed the Bibb lettuce salad.

Plated wth ASV, purple and red fingerlings w/ snipped chives out of the garden.
