I've been wanting to do some Flank Steak for a while now. Picked up the smallest one I could find as I'm just cooking for myself tonight. Even then I only cooked about a third of it. Will probably do a stir fry or a second cook during the week when I get home. Did a nice creamy poblano/mushroom mixture to go along with it. Topped it off with a nice Y. Gold Potato, baked.
Earlier in the day I toasted up a Poblano for the side.

Did a little prep work and got the ingredients ready.

The loneliest potato around.

Cut maybe a third of a pound of flank steak. Did not use recipe rub. I used Tatonka Dust instead. I've seen it praised so much on this board, I had to try it. I wasn't disappointed. Got it rubbed down and rested at room temperature for about an hour.

Got the mushrooms and onion going in fry pan. Sure miss my cast iron, but this pan did fine.

Now they're getting happy.

Added the heavy cream and the peppers I grilled earlier. The cream has pretty much thickened and coated the mushrooms in this shot.

Got my little hunk of Flank Steak on over hot coals.

Flipped. Only did 3-4 minutes a side.

Plated and ready to eat.

This was a delicious cook. The Tatonka Dust is one of the best rubs I've tasted in a while. The peppers and mushrooms were excellent too. I'm very satisfied with this cook. Thanks again for looking.
