First Smoke on My New Mini!!

Hi Gang - I got my mini wrapped up last weekend, getting ready to post, and my computer crapped out. New computer and I'm good to go. Wanted to do something simple so I went with a whole chicky. I brine'd it using Michael Ruhlman's quick brine recipe



obligatory pic if what charcoal and wood looks like in the basket :) That's peach and next time I will probably put only two chunks in - it had a really strong smoke flavor.



TBS - gotta love it! It settled right in at 225* once I put the chicken on - steady Eddy the rest of the way!

Wow Brian, great looking cook and terrific job on the mini. Did you cut the bottom out of the pot or just drill holes in it. I've seen a couple of builds (not on this board) where they drilled the pot. Seems like cutting out the bottom would result in a better product. What did you do for a water pan?

I cut the bottom out - pretty thin aluminum - I just used a jig saw with a metal blade. Foil wrapped pie plate for the diffuser, I didn't put water in it.

That's the way I've been doing it for awhile .....You are off to a good start...that chick looks delicious.
