First Ribs On The Performer

My first trial of ribs on the Performer went well. This is also the first time that I did not foil. I used the snake method and it worked very well.

 
Thanks Cliff. For my first go at it I'm pleased. Scott the kettle ran between 245 and 250. Here's a pic of the setup and wood placement.

 
About 4 1/2 hours Bob. I think they could have gone just a bit longer. They did come cleanly off the bone and I don't like fall off the bone though SWMBO does, but i think they could have used just a bit more time.
 
Thank you Dustin. It was a great learning opportunity just as each cook is. This was the first time I didn't foil and I'm not sure I'll go back to it. The bark was far superior.

I'm not a big fan of fall-off-the-bone either. (Although the CEO is). I like a bit of tug.
 
Great looking ribs. I use the snake method whenever I do L&S on the performer, much easier to maintain temps than a minion cook.
 
Thanks Rich. I agree with you. I used the snake and once it came up to temp it stayed a steady 245-255.
 
Thanks Barb. My wife was not home for them but I did save her some (good hubby) to try this evening. So I'll see if they get the thumbs up form the CRO (Chief Rib Officer).
