First Post - Finally

Hi all,

I have been a long time lurker and fan of all of you. I decided it was finally time for me to post a couple of my cooks. I am fairly new to the BBQ scene. About a year ago I was given a OTG and started cooking some things on it using the snake method (thanks for all of your posts that helped me know what to do). Early this year I found a steal of a deal on a 18.5 WSM so I snagged it up and have cooked a few things so far. I know these pictures are old but work has been extremely busy and I haven't had time to do anymore cooks.

I was in charge of some 4th of July cooks so I went ahead and cooked some ribs.

The second cook I did was a full packer brisket. I have never cooked brisket before and I was extremely nervous.

I know I could do better with these cooks and that is why I look forward to the comments all of you have. I was very pleased with these cooks and can't wait to do it again.

The pictures are fine, like FINE!:wsm: Looks to me like you about have that nailed. One thing you might find helpful, if you want to do more ribs at a time. I bought two rib racks (one for each food grate) and can do four half rib racks on each grate (for a total of eight half racks of ribs). I typically do three on each grate as the packages of ribs I buy have three full racks of ribs in them. What we don't eat, my wife vacuum packs them and freezes them for later.

If you re-heat them properly (we use the oven) and sauce them while re-heating they are as good as "just off the smoker"...

Happy to have you posting on the forum.

Regarding the photos, I use PhotoBucket and downsize them with the free app "Fast Image Re-Sizer" before uploading them to Photobucket. Then, they are easy to download in a decent size, using Photobucket's copy function.

Just a thought or two...

I'd say you nailed both the ribs and the brisket. They look delicious on both counts. Great job.

Welcome to the forum. Both the ribs and the brisket look wonderful and I bet they were a big hit with the family. Don't worry about them being a little older, life happens and sometimes we don't get to it right away. I have pics of a cook that I need to post from July and just haven't taken the time. If you want to make the pics smaller, go for it but it is not a big deal. You will find everyone here very friendly and willing to help. Good luck on future cooks.
 
Great 2nd post! From the looks of things it appears you did just fine. Out of curiosity, how long did you cook the ribs for and at what smoker temperature? Also, same questions for the brisket, plus, at what temp did you cook the brisket to?
 
I haven't even lit my first smoker yet... time's coming.:)

I'm very impressed with your pics and the finished products look great. I like your larger pics too.:)

For that being your first Brisket, it looks fantastic! You seem to know what you're doing. Your pictures are awesome also (we love pictures).
 
Thanks! I don't remember the exact amount of time the ribs were cooked for. I was trying for the 3-2-1 method but I think it ended up being more of a 3-1-15 minute type of method. My WSM likes to run at 275 from what I have experienced so far. I have been wanting to get it closer to 250 but my WSM has a mind of its own. Brisket was also cooked at the same temperature and I want to say it was cooking for close to 14 hours.
