First Pepper Stout Beef w/pics

I did this last weekend and am just getting around to posting. I have been wanting to do a PSB for a while and decided to get it done before the college football playoffs. All in all, it turned out great. Made some really good sandwiches.

Trying the collage function on my new phone. Here is the smoker set up and my faithful little helper.


About 5lb of chuck roast seasoned with Weber Steak and Chop seasoning.


Got the WSM up to about 250 and put the meat on around 8am


After the meat hit 165 (about 3.5 hours) I added it to the veggies and wrapped it tightly and brought the pit up to about 350.


After about another 3-4 hours, the meat was probe tender (appx. 200 IT), I pulled it and put it back on the pit uncovered for another hour.


Here is the finished product, it tasted great. Took about 9 hours to cook and about 3 minutes to eat. The good news is that it made a ton and I froze a bunch.


If only the Seminoles would have been as good as the sandwich. Oh well.

I just took a chuck roast out of the freezer and was wondering what to do with it.

PSB always makes me hungry. Great looking sandwiches. Thanks for all the pics. Feels like we were right there...can almost taste it.
