First Baby Back Ribs Cook

Temp stayed around 250F.

Got two racks, used Spice House rib rub and mix of cherry and hickory wood. Ended cooking about 4 1/2 hours, then wrapping and resting for 20 minutes.





Ribs were good, had some cling to them and very tender.

Would definitely make again.

Looks good. Try the high heat method. Takes less time and not as dry imo.

They had some serious bark/crust on them, but the meat wasn't dry - certainly lean ribs. Temp-wise, yeah I was shooting for 275F, but I think I needed to let the unlit coals catch a bit more before stacking everything back together.
