Bought some heritage breed pork chops for supper tonight. I used 1/2 chimney of KBB with a small chunk of apple wood for a little smoke. Seasoned them with a KC-style rub, sauced one and left the other one alone. These were from a local farm and I’ll say they were the best tasting chops I’ve had. Good flavor and tender.
