Dungeness Crab Cakes

Did one of our favorites yesterday, crab cakes! very simple, very good

Start out with some stuff - The key to good crab cakes - White bread - I kid you not.

A little red pepper, onion, parsley and mayo thing mixed up - Makes some patties, then let rest over night. They are sturdier and don't crumble as easily if you let them hang out over night.

into some cast iron and on to the gasser they go -

served with some green beans, orzo and some 5 minute pickles fresh from the garden - love those things!

I was just looking at a crab cake recipe the other day. Yours looks better. They look absolutely delicious Peter. Excellent sides and presentation!

Dungeness Crab and Sourdough.....two great reasons to be from the SF Bay Area! :)

Very elegant plate Peter. We don't get dungies down this way but I bet that wouold be good with some locally sourced blue crabs. What was the sauce you used on the cakes? It looks like a remulade...
