Dried Beef and Peperoni

I dried an Eye of Round Roast using BearCarver's recipe as a guide. It is a great snack on a Ploughman's Lunch, Charcuterie Platter, on a sandwich, etc.

The Peperoni was made per Len Poli's recipe. I plan to try it on my next pizza.











 
You are truly an artist Dwain. You've really gotten me interested in Charcuterie. Home Brewing too, but first things first. Great job!
 
Dwain, Nice Job on both the sausage and beef. Len's recipies always look a little intimidating to my skill level.
 
That round roast is screaming for some English mustard.....yum, yum!!

Them snorkers don't look too shabby either. Great job!

I few years ago met Bear on another site, found out we are cousins, thanks for the link, all of his recipes are good, his "unstuffed beef peperoni sticks" are killer, they don't last long enough to make it to the freezer, ...you might want to try them too.
 
That looks Amazing! Ordered my copy of " Charcuterie: The Craft of Salting, Smoking and Curing" last week. Should arrive this week sometime. Looking forward to diving in and creating some fine eats like the ones you've shared with us.
 
My moms got me a charcuterie book last Christmas. Many of your posts are really making me want to dig it back out. Btw. New Years night had to be a rough one for you, buddy. :)

SWMBO is an Ohio State fan. ;) I know A LOT of Bama fans but didn't have a dog in the fight. It was fun watchin her do the happy dance. She is still on Cloud 9.
