Happy Holiday Weekend to everyone. I hope you had as good and full of a weekend as we have.
Friday night we had a 10 homemade pizza pie feast followed by a Easter egg dyeing. My niece, brother in law and, mother-in-law were here with us and it was truly a great time for all of us (and the pizza was pretty good too).
Yesterday we made desserts (more on that later) for tonight's dinner and my wife and I ran some last minute errands to get ready for today.
Then today I followed almost the excect same play book as last years Easter cook. Double Smoked ham, rotisserie chicken with potatoes under and some other good stuff cooked and prepped inside the house.
Ham went on around 12:15, kettle was filled with JD and pecan wood.

Here is when it hit 110 and moved it into the foil pan so I could start to glaze it.

By this point both kettles were in action.

About halfway through glazing I rotated the ham so I could also glaze the open bottom (fyi none of those slices made it to the table, they were eaten during the craving). Here is the ham as I was pulling it.

After some rest time for both the meats and work in the kitchen dinner was ready. I tried to get a clear shot of he spread, but both my daughters were like nah, we're eating.


Here is my plate. Everything was excellent, but the ham with some cheesey potatoes and beans was by far the best bit

Now all day I just wanted to get through dinner so I could have dessert. Yesterday my mother-in-law and daughter made upsidedown pineapple cake, made right in my 12 inch old CI skillet. It was the same skillet we cooked the asparagus in today. It lived up to the hype! It was so good!



We also made triple chocolate cake. I did not have any of that today, but I know from past holidays it is also spectacular.

After dinner and dessert, we had a small Easter egg hut, my youngest was trying to teach us all how to throw the dicus and her showing off. Great family, great food, great weather, great weekend!
