Cowboy Burgers

I picked up some Cowboy Burgers from my butcher saturday. They are called "Cowboy Burgers" because that's what he calls them, but they are delicious

As you can see they ground beef with chunks of jalapeno and cheese wrapped in bacon. I seasoned them with some kosher salt and Holy Cow rub.

Since they are so big I cooked them indirect with a chunk of Fruitawood Post Oak.

I shut down the vents to keep them in the 300 range.

I cooked them to 145, and topped them each with 2 slice of sharp cheddar each. My family doesn't skimp on the cheese.

It's all about that burger to bun ratio, right? Served on some probably way too small Hawaiian burger buns. Just had some Ruffles and Ranch dip on the side like a true American.

Normally this is the kind of cook I probably wouldn't bother posting but it's been a while. I ordered in some fresh Beef sausage from Southside Market in Elgin. I want to see how it compares to my own recipe. I'm going to cook that and a Brisket for Mother's Day, next weekend. I'm really looking forward to that cook.

 
Really like those burgers. and cheese! I'm sure they were great.

Need to find a butcher that makes those. There's a few cowboys left around here, must be a butcher that supplies them.
 
Those are killer burgers. And I'm with you on the two slices of sharp cheddar.
 
Good lookin' burgers! I'm with you on the more cheese is better burger philosophy. Next weekend sounds like it's gonna be fun!
