Chicken thighs seasoned with Peri-peri rub my wife brought back from her last trip to South Africa.

Glazed with a little Australian sweet chili sauce.

Plated. Again, nice & simple with baked potato and coleslaw. Merlot's long gone so it's a very passable bottle of Cotes du Rhone today.

Next up, a nice little boneless pork shoulder joint on offer locally, roast potatoes and the new toy - Rotisserie...

Plated with some Norfolk Bobby beans (As you can see, sharing today).

Finished off with a cheeky little pineapple glazed with honey, rum and vanilla essence.

Finished. Could have left it a little longer for more colour but impatience got the better of me. Delicious served with a little fresh cream.

And as a bonus, roti chicken for workday sandwiches during the week:

Really like the rotisserie, I'll be using it a lot. Thanks for looking.

A slew of great cooks! I think I'm going to be dreaming about those potatoes tonight.

Edit: I just realized you were using a roti on a Q. Outstanding! I had no idea such an accessory even existed.

WOW!!! Phil you nailed that on all 3 cooks. I sure do like the pineapple, that sounds and looks delicious.

Those are great looking cooks. I also like what you did with the pineapple. Will have to try that method.

Wow Phil your Q really has some international flair going on. Great job across the board. I will be trying that roti pineapple before long...

Regards,

John
