Corned Beef and Cabbage Dinner

Since we had a Corned Beef in the freezer for seven months I decided we should use it. Saw a thread Cliff had done with corned beef and decided to give it a try. Rich couldn’t find the recipe so he E-Mailed Cliff and he was kind enough to send it to us.
Got all the ingredients together, but for the potatoes and cabbage that will go in later. Cut veggies up, placed in pan with a can of tomatoes and 1 can water. Corned Beef on top covered and cooked for 2 hrs. at 385*. Then added small red potatoes, cabbage cooked another hour. Checked for doneness and then brought in to rest for 15mionutes before plated with veggies.
Now we know why Cliff likes it, because it’s fantastic. Thanks Cliff.

I checked current CB prices: $5.99/#. I buy several of the same packages 1 day after St. Paddy's Day for $.99/#.

I de-salinate them in cold water (3X/hr) for 1 hour then 1X/hr for 3 hours before prepping them for smoking. It really cuts the salt flavor down. Then I slice them thin for sandwiches.
 
That is a fantastic recipe Barb. You did a beautiful job on it. Glad you liked it. Hard to go wrong with a Jamie Purviance recipe.
 
Barb, that looks amazing! Corned beef is my favorite thing in the world. I am going to try this soon.
