I recently did a Chuck Eye cook, the Chuck Eyes were purchased at FoodMaxx

Cliff suggested getting them at WinCo. I found a package and bought them. They do indeed look better that the FoodMaxx Chuck Eyes

I marinaded them in Montreal's Steak just like I did with the FoodMaxx CE's

Got a nice fire going in the Santa Maria

Cliff was right, the WinCo CE's were much better. Don't get me wrong, the FoodMaxx CE's were excellent, but these were even better. Thanks for the heads up Cliff. Anyone wanting an amazing steak at an amazing price, I suggest Chuck Eyes From WinCo and or FoodMaxx
 
Those look really good Chuck. Unfortunately we don't have a WinCo or a FoodMaxx anywhere near here. The few times I was able to find them Barb and I really enjoyed them, but kind of like hen's teeth, almost impossible to get here.
 
Those chuck eyes sure look good. Got some in the freezer I'm saving for next week.

fwiw - last time I was in my local Winco - most of the beef was select grade. When they first opened last year, most of it was choice.

I would agree that most the meat is Select, I seldom see Choice. And that's the challenge in BBQ-ing, to make greatness from not-so-great. Chuck Eyes make it easy to do so, must be something in the name :)

Our Winco up here must be breaking with tradition. I was in there yesterday looking for an eye of round roast. There weren't any so I asked one of the kids doing the stocking if they had one in back. He went and got one of the butchers. He was a really nice guy and said there weren't any cut but he'd be happy to cut one for me if I could wait 5 minutes. I asked if it was Select or Choice and he said he was sure it's Choice. He went on to say that 99% of all their beef is now Choice. While I waited, I cruised the meat on display and they all had Choice stickers on the packages.

So Cliff, whatever came up with that roast? That looks like a roto cook to me, but you're full of surprises...

They sort of favor a Ribeye but I’m sure they don’t taste quite as good...or do they?
I’ve never tried them. Wonder if they would be a satisfactory alternative for the pricey Ribeye?

I’m interested in this project Cliff, every one of those that I’ve tried have “not been great”. Now that I have a slicer and can cut the thing paper thin, I may be in a better situation to revisit the cut.
Let us all know how this shapes up. I see them on sale pretty often and would love to make something fabulous using one!

IMHO, the Chuck Eyes are equal in flavor to Rib Eyes, but then I typically get Select, not Choice or Prime. YMMV
 
Chuck eyes are a great cut of meat for the price...That's why there called poor man's ribeye... Not the same in taste as a Ribeye to me, But there darn good and at a great price for the amount of Steaks that come in a package
