Recent cooks.
These chuck eyes looked like Prime grade and were good, but as I feared, not all of the marbling was fat, they had a good amount of gristle too.
		
		
	
	
		 
	
		 
	
		 
	
"Fried chicken" on the Kamado.
		 
	
St Pats Day corn beef and cabbage.
Soaked a $2/lb point from Aldi, dried well then in the fridge for a spell.
Rubbed with Weber salt free steak seasoning. Cherry and pecan for smoke.
		 
	
At 2.5 hrs. it went into foil.
		 
	
Butter stuffed cabbage added a bit later.
		 
	
The corn beef turned out great!
		 
	
Dull looking plate, red potatoes would have added color, but all I had was gold.
		 
	
A note about the cabbage.
I smoked it with cherry wood for an hour, then in foil with some apple juice.
The outer leaves had a creosote taste, but after removing them, the rest was very good.
