Every time I see you grill up some chuck eyes it makes my mouthwater.... Those plated pic always look delicious Jim.

Jim, you just never run out of ideas for great cooks with chuck eyes or anything else. Very well done! Thanks to you and Bob C. for showing the way with those great chuck eyes.

Delicious cook as always Jim! Steaks look great and I'd enjoy a plate - onions are perfect! Way to brave the elements!

Wow Jim, the old green one came through again. Love the chuck eyes, onions & spuds. The whole meal looked fantastic.
Nice post!

Do you do anything to your onions as far as seasoning or oil? And when you cook them is it just in the cast iron over direct heat?

Everything looks perfect to me. My eyes thank you for those wonderful looking plates.

thanks guys:)

Matt, I do use a little EVOO (very little), I don't want the oil to pool up in the CIS while cooking. And last night, I did season the onions with a dusting of PIG SALT.
usually, I do not season them.
these onions were roasted in the oven at 375º for nearly an hour.

Great to see that the old avocado still can still churn out some beautifully charred slabs of bovine!
All I can say is cowabunga dude!
