Chuck Eyes and roasted cauliflower

Had a great trip to the grocery store and found some beautiful looking Chuck Eyes! Just did a little olive oil and my Santa Maria rub.
Started the evening off with a Negroni!Prepped the cauliflower with a healthy dose of red onionUsed JD lump with a light addition of cherry Pulled for a short restChuck’s are so flavorful! Cauliflower went perfect with them!Cheers!
