This year we had some chicken and sausage gumbo and some homemade smoked boudin.

Getting the boudin going. This is pork shoulder and I substituted chicken liver for a lighter liver taste. About 2 1/2 lbs pork, 1 lb chicken liver.


Stuffing the sausage with 6 cups of rice for binder.


Boudin is made. Had a couple of slight blow outs.

Boudin turned into links with some smoke on it.

We had a great Christmas dinner. Everyone loved the Gumbo. The boudin turned out great but was a little spicy for some palates. It was perfect for mine!
