"Chipotle" and Chicken

We always grow a mess of peppers, many years ago I tried smoking some on a funky stack smoker I had and burnt 'em up. A couple of weeks ago I tried again, smoked 'em on the warrior and tried finishing (drying) in the oven. Too hot! burned them all. Tried one more time... here they are laid out on the grate



that's Jalapenos, Purple Jalapenos, Poblanos, Padrons, Serranos and a couple Habanaros that I picked up at the market. I chickened out and removed seeds/membranes from half. Tossed them with EVOO and salt, two row snake with mesquite. About 2 1/2 hours later



I racked them to finish in the oven, much lower drying temp. (approx. 150*) this time.



Success! I tried grinding them in the FP - that wasn't working - I threw in the blender. That did work, a blend of small flakes and powder. Nice smokey flavor up front with the heat coming up next. I would add more salt in the beginning next time



The chicken: Cindy got me the Weber Poultry Roaster for my birthday, we finally got around to trying it out. Here she is with her girdle, dusted w/ Kickin' Chicken

I really like that I can collect the pan drippin's, it made a very nice gravy. For your consideration

Next to your Yakitori Chicken, I think that is my favorite post of yours, Brian. The chicken is beautiful and the potatoes and gravy look out of this world. Peppers look great too.
 
Beautiful cook my friend, I grew the same peppers and I can tell you watch out with them, my dried Jalapeno's and Serrano's and especially my Cayenne's will make you cry and lose your breath for a few seconds. Ask me how I know
 
You're a braver man then me Brian, used to like the heat but just can't handle much of it anymore. But that chicken plate looks awesome!

Awesome! I love taking the red jalapeños at the end of the season and smoking them for chipotle. Nice job!
 
You've got me thinking Brian. I've some mole peppers that I intend to dry. Maybe I'll try a cold smoke on half of them and see how it goes. Thanks for the notion.
