Chicken Thighs on the Vortex

This has become one of my go to cooks for the family as of late. Full load of Kingsford Pro, dial the vents down to about 25% after adding the coals to the vortex, foil around the vortex before adding coal. Check and rotate lid every six minutes or so. Not sure on the voodoo of smoke direction but things happen fast with the vortex going so I like to check frequently. When the skin begins to char to my liking, flip and sauce the bottom and cook for five minutes, then flip and sauce the top. Cook for another five minutes or so. If the IT is still short of what you want I pop them in the oven at 375 until they are to my liking. Thighs are so forgiving.
