Chicken Mole

Some Chicken Mole for a pot luck tonight for a Mens Hispanic bible study group I have sort of been adopted into. I don't speak Spanish but most of them speak English so I go sometimes. I met them thru my Wife's Hispanic Services. I go to that with her since they have headsets and somebody will translate what the Pastor is saying into English. Anyway enough babbling.

Chicken thighs trimmed up and seasoned with a little Lawry's Seasoning Salt and black pepper


Chicken done


Pulled the skins off and then into a pot of Mole sauce to simmer a bit.
 
Looks great John. Mind me asking what mole recipe you use? I've never tried it but I've been very curious about authentic Mexican cuisine and it seems to be prevalent in it.
 
Nice job John. They are going to love it. We sometimes toast seasame seeds and top our mole with it also.

I don't have a mole sauce recipe, I use a store bought paste and add chicken broth to it.

Wow that chicken swimming in mole looks outstanding. How did you serve it?

I like mine in a bowl with white rice, pinto beans, a couple of thighs and a ladle of the sauce and let the rice soak it up.
