Thursday, i brined some drumsticks and thighs in a simple brine (1 qt water and 1/4 cup table salt) for one hour. Then rubbed with black pepper and garlic powder with parsley. (Actually grabbed the wrong garlic powder, but it turned out OK.) No salt necessary since the pieces had been brined.
Quick sear then off to the side to finish indirect. Some apple wood chips gave them a nice smoke flavor.
Lucky day! Lauren is making buttermilk biscuits from scratch!
