Staying with my resolution to try new and healthy cooks this year I decided to do Chicken
Cacciatore with a recipe from McCormick Recipe Inspirations. The ingredients for tonight:
(The small packets are pepper, minced garlic, marjoram, oregano,rosemary and thyme leaves).
I “loosely” followed the directions, but added my own touch to the mix.
After marinating the chicken breasts for an hour in Italian dressing they were cut into strips, and
then were put in my CI skillet with a couple tablespoons of smoked olive oil and seasoned with
Weber Garlic and Herb.
Put onto the Performer, using lump charcoal and a small chunk of cherry wood.
Chicken browned/removed and the veggies were added to the skillet.
Once the veggies were cooked the diced tomatoes, tomato paste and spices to the skillet and veggies.
This had started out to be just chicken cacciatore, but my wife wanted shrimp for dinner too.
So instead of putting the shrimp on a skewer and since it was already cooked, I decided to just
add the shrimp to the mixture.
Once the sauce was boiling and cooked down a little, I added the chicken and shrimp to the mixture.
I let it simmer for about 5 minutes and then removed it from the Performer.
Plated on a bed of Penne pasta with sliced jalapeno olives, sliced cherry tomatoes and Parmesan,
Romano and Asiago cheese.
It has been several years since I had chicken cacciatore and I really don’t remember it tasting this
good! Great flavors and the shrimp was an added touch to this delicious meal. I have used the
McCormick Recipe Inspirations before and I highly recommend that you give them a try.
